How to Cook Perfect Salmon
- Pat the salmon fillet completely dry with kitchen paper, especially the skin. Season with salt and pepper.
- Put your pan on a medium heat with a little oil, and let it heat for 1-2 minutes so the oil comes up to temperature.
- When the oil is shimmering, lay the fillet in skin-side down, away from you.
- Leave it alone. Don't move it. The skin needs a few undisturbed minutes to crisp and release on its own, if it sticks, it simply isn't ready yet.
- Cook skin-side down for around 4–5 minutes, until the flesh has turned opaque most of the way up the side.
- Flip once and cook the other side for just 1–2 minutes to finish.
- Lift it out, it should release cleanly, and rest for a minute before serving.
- Your pan wipes clean in seconds with warm soapy water.
